Chatterton, a Savage, a Burns, or a Byron, others, finding it less difficult to be eccentric than to be brilliant, have therefore adopted the one, in the hope that the world would give them credit for the other. But the greatest genius is never so great as when it is chastised and subdued by the highest reason; it is from such a combination, like that of Bucephalus, reined in by Alexander, that the most powerful efforts have been produced. And be it remembered, that minds of the very highest order, who have given an unrestrained course to their caprice, or to their passions, would have been so much higher, by subduing them; and that so far from presuming that the world would give them credit for talent, on the score of their aberrations and their extravagancies, all that they dared hope or expect has been, that the world would pardon and overlook those extravagancies, on account of the various and manifold proofs they were constantly exhibiting of superior acquirement and inspiration. We might also add, that the good effects of talent are universal, the evil of its blemishes confined. The light and heat of the sun benefit all, and are by all enjoyed; the spots on his surface are discoverable only to the few. But the lower order of aspirers to fame and talent, have pursued a very different course; instead of exhibiting talent in the hope that the world would forgive their eccentricities, they have exhibited only their eccentricities, in the hope that the world would give them credit for talent.

VEGETABLES.-Summer cabbages, peas (nearly out), kidney beans, French beans, cauliflowers, artichokes, asparagus, sallads of all kinds, and cucumbers.

FRUIT. Cherries (nearly out), currants, gooseberries, plums, pears, melons, and apricots.

BEEF STEAKS AND OYSTER-SAUCE.

Throw your oysters (having first strained off the liquor) into cold water, to take off the grit, while you simmer the liquor with a little lemonpeel and mace; then put in your oysters; stew them a few minutes; add a little cream (but this is not essential), and some butter, rubbed in a little flour; boil them up once, and let your steaks be put ready to pour it over.

TO ROAST A LEG OF VEAL.

Let the fillet be cut large or small, as you may think fit; take out the bone, and fill up the space with a fine stuffing, and skewer it quite round, and send the large side uppermost ; when half roasted, put a paper over the fat. It must be kept a good distance from the fire, and it takes considerable time in roasting. Serve with melted butter poured over it.

TO BOIL A NECK OF VEAL.

Cut off the scrag to boil, and cover it with onion-sauce; it should be boiled in milk and water; parsley and butter may be served with it instead of onion-sauce. This joint may be strewed with whole rice, small onions, and peppercorns, with a very little water, or boiled and eaten with bacon and greens; the best end may be either roasted, broiled as steaks, or made into pies.

BREAST OF VEAL.

If this be large, the two ends may be taken off and fried to stew, or the whole may be roasted; butter should be poured over it, and lemon with it. Boiled breast of veal, smothered with onion sauce, is an excellent dish, if not old or too fat.

MINCED. VEAL.

Mince cold veal as fine as possible,

but do not chop it; add a very little lemon-peel; shred two grates of nutmeg, some salt, and four or five spoonsful of weak broth, or milk or water; simmer them gently with the meat, but take care not to let it boil, and add a little butter rubbed in flour; put sippets of toasted bread round the dish.

ARTICLES TO MAKE STUFFING, WHICH MAY BE SELECTED AND PROPORTIONED AT PLEASURE.

Crumbs of bread, parsley, white pepper, salt, nutmeg, yolk and white of eggs (well beaten, to bind the mixture), oysters, anchovies, tarragon, savory, pennyroyal, knotted marjoram, thyme, basil, yolks of hard eggs, Cayenne, garlic, shallot, chives, sage, Jamaica pepper, cloves.

A little beef suet or scraped ham, or fat bacon, cold fowl or veal may be added, as thought proper.

MOCK BRAWN, A PRETTY AND
CHEAP DISH.

Take half a pig's head, with the tongue and ear nicely cleaned, sprinkle with a little prunella and common salt. Let it lie four days; then boil it till the bones will leave the meat.

Take four ox-heels: let them be hot pick out all the bones and black spots. Spread them on a clean cloth, on a table: put the heels over it: cut the head in pieces, spreading it on the heels. Sprinkle a little salt on it. Be sure you cut the tongue, and lay the slices in the middle. Tie the whole up as round as you can, and let it boil half an hour, or three quarters, if large. Do not take it out of the cloth till the next day: this will keep it in form.

USEFUL RECEIPTS.

SALTED MEATS.

Meats that are to be salted should be first sprinkled a few hours; afterwards they should be hung to drain, and then the salt should be thoroughly rubbed into them. They must be turned every day, and washed with the brine in those parts which are not

immersed in it: the oftener the meat is rubbed, the sooner it will be fit for use. Be sure to remove all kernels and bruises: they will not take salt.

TO CURE BEEF FOR DRYING. Let the beef steep two or three hours in water, wipe and well dry it; then, to every twelve pounds of beef, rub in half an ounce of salt of pru nella, one ounce of saltpetre, and one ounce of bay-salt. Let it lie two en hours, and then rub in half a pound old of coarse sugar or treacle. Let it lie two hours more, then rub it well with a little bay-salt and common salt. and Let it remain two nights, then hang it up to drain. When it has done dripping, hang it near the fire: it will be fit for eating in ten days after. Before dressing, steep it in cold water for an hour or more: boil, or roast it.

Take two gallons of pump-water, one pound of bay-salt, one pound of coarse sugar, six ounces of saltpetre; boil it all together, and skim it. Cut the pork in what pieces you please; but lay it down close, and pickle, when cold, over it. Lay a weight on the pork, to keep it under the pickle: cover the whole close in a week. If you find the pickle from the air, and it will be fit for use begins to mother or spoil, boil it afresh, skim it thoroughly, and, when cold, pour it on the pork again.

WINE.

Now is the time to make wines: sugar is cheap. For red wines good strong dark-brown sugar is best, which may now be bought in a quantity, from five-pence to sixpence the pound. For white wines lumpsugar must be used; that at ninepence the pound is very good for the purpose.

GOOSEBERRY WINE is thus made': -To one pound of gooseberries, chopped and pounded, put a quart of water; let it stand eight or ten days, stirring it frequently; then strain it,

THE ART OF COLOURING WHITE
HAIR BLACK.

Pour into an earthen vessel two parts of weak nitric acid to one of lead in filings; the nitric acid will dissolve the lead, and hold it in solution; if the hair be rubbed with it, it will turn it black. After the hair has been dyed, it may be smeared over with oil, which will blacken it still more.

This operation tends, however, to burn the hair, and it has happened, that persons who have used this preparation, have had swellings of the salivary glands and skin of the head.

TO CLEAN THREAD-LACE OR VEILS.

Fasten the lace in a frame, or stretch it in any way tight; take a light brush, which dip in a lather made with curd-soap and water, and brush it over first with the lather, and afterwards with cold spring water; let it be dried whilst it is stretched: when dry, place it between two pieces of dry paper, and pass a warm iron over it.

A PASTE TO EXTRACT GREASE FROM

WOOLLEN CLOTH.

One pound of pipe-clay, half an ounce of spirits of wine, the juice of one lemon, a quarter of a pint of oxgall, half an ounce of spirits of turpentine, and one ounce of cream of tartar, mixt together: cover the grease-spot

with a little of this, and brush it off with water; if this composition gets hard, soften it with any of the abovenamed liquids.

TO MAKE INDIA GLUE TO CEMENT PAPER, SILK, THIN LEATHER, &c. Take an ounce of isinglass-glue, and an ounce of glue made of parchment; of sugar-candy and gum-tragacanth, eachtwo drachms. Add an ounce of water, and boil the whole together till the mixture appears, when cold, of the proper consistence of glue. Then form it into small cakes, or rolls, as most convenient.

The glue may be wet with the tongue, and rubbed on the edges of the paper, silk, &c. that are to be cemented; this will, on their being laid together, and suffered to dry, unite them as firmly as any other part of the substance.

DOMESTIC MEDICINE.

A WORD OF ADVICE.

Always have a little Epsom salts in the house; cork it closely; also a little ipecacuanha for an emetic: 25 grains, or as much as will lie on a shilling, is a dose. You may keep also a little laudanum (25 drops are a dose) in case of colic, pains, spasms, or restlessness at night, or tooth-ache, in all of which it relieves.

The best poultice is half-boiled burgoo; it is better than bread and milk, and cheaper.

Simple spermaceti ointment, or Turner's cerate, are better than any other ointment in clean and fresh wounds; it should be spread on the smooth side of the lint: in nine cases out of ten it is spread on the woolly side.

- When you are feverish, drink largely of hot whey in bed, so as to produce perspiration. This is good in every complaint.

DR. HOLLAND'S FAMILY PILL.

Take a drachm of the compound extract of colocynth; add six grains of calomel; mix and make into fifteen pills: one, two, or three, are a dose. They are also good for the bile,

FOR HOOPING COUGH.

Take of conserve of roses, raisins of the sun, stoned, brown sugarcandy, two ounces each, and two penny worth of spirit of sulphur ; beat them up in a conserve, and take a tea-spoonful night and morning.

This is a mere palliative, and has no power in curing hooping cough.

OINTMENT FOR INDOLENT ULCERS.

Take 20 grains of red precipitate powder, an ounce of common lard, and mix. Spread upon the smooth side of lint thinly, and dress the ulcer twice a-day.
