To become a perfect salad-maker do not attempt too much at the beginning; practise on plain salads and plain dressings for some time before you try making combina tion salads, fancy dressings, and elaborate garnishings, and you will soon become a perfect salad artist.

When about to prepare a salad make up your mind just what you are going to do; then get everything on the table before you, and begin work. When your dress ing is completed set it aside until the proper moment to serve the salad arrives; then mix the salad and dressing together, and serve - the result will be very satisfactory. Should you prepare the salad half an hour before it is wanted it will not give satisfaction, as the lettuce will have become flabby and the dressing watery and insipid.
